Filling Ingredients:
3 pints blueberries washed and pat dry
1/2 cup sugar
2 tablespoons cornstarch
1 teaspoon lemon juice
Dough Ingredients:
1-1/3 cups all-purpose flour
2 tablespoons sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup heavy cream
1/2 cup sour cream
6 tablespoons cold unsalted butter
Steps ~

Rinse Blueberries

Washed and dried blueberries with sugar and cornstarch
Step 1: Wash and pat dry, 3 pints of blueberries.
Step 2: Put blueberries in bowl and mix in sugar and cornstarch.
Step 3: Place blueberry mixture in baking dish, approximately 2" deep and 8x8" square; or 10x2" glass pie pan; or 12" oval gratin.
Step 4: Drizzle approximately 1 teaspoon of lemon juice over blueberry mixture.
Step 5: Preheat oven to 375 degrees while preparing dough.
Step 6: In medium bowl, combine flour, sugar, baking powder, baking soda, and salt.

Step 7: Cut each cold tablespoon of butter into quarter pieces and put into flour mixture.
Step 8: Using a pastry blender or two knives, blend or cut the cold butter into the flour mixture, until it resembles coarse breadcrumbs.
Step 9: Combine 1/4 heavy cream and 1/2 cup sour cream with a whisk and add to the flour and butter mixture.
Step 10: Combine cream mixture with flour mixture using a rubber spatula or fork until dough is formed.

Step 11: Lightly flour counter top surface and roll dough into desired pan shape and place on top of cobbler filling.
Step 12: Bake in oven for approximately 45 minutes.
Blueberry Cobbler ready to serve.
Step 13: Serve with whipped cream or ice cream if desired.
