Back in the 60's, the late Julia Child added the French Cuisine to the American kitchen table and among them was the infamous Quiche Lorraine. As Julia Child would remind the American TV viewers: "The classic quiche Lorraine contains heavy cream, eggs and bacon, and no cheese." Fortunately, we Americans love all kinds of Cheeses. Fall is finally upon and with the onset of cooler weather presents an ideal time to fire up the kitchen oven. So without further much ado, let's start baking.

Prepare Pie Crust either store bought or home made.
Ingredients:
Homemade or store bought pie crust shell
1 cup shredded cheese such as Jarlsberg, Gruyere or any favorite
1 cup Broccoli florets, blanched
1 small onion chopped and sauted until soft
1 1/2 cups half and half
3 eggs
1/2 teaspoon salt
1/8 teaspoon white pepper

Cook broccoli in small pan of water.
Step 1: Cook broccoli in a small pan of water until florets can be easily pricked with a fork. Stop the cooking by running under cold water.
Step 2: Chop 1 tablespoon of onion and saute until soft.

Step 3: Place broccoli, onion and shredded cheese in pie shell.

1 1/2 cups half and half 3 eggs.
Step 4: Blend 1 1/2 cups half and half with 3 eggs, salt and pepper. Then pour on top of broccoli, cheese and onion, in pie shell.

Cream mixture poured on top of broccoli, onion and cheese.
Step 5: Bake in preheated 375 degree oven for 25 to 35 minutes. Bon Appetit and enjoy!
